Our Church did a Parish Cookbook and I submitted a recipe and I accidentally misspelled “bowl” not once, but twice! ![]()
The are repeats in our Home!
I’m actually making Jerk Chicken tonight in the outdoor, electric smoker! I’ve had it marinating overnight.
I like to mix a half-spoon of the Jerk Seasoning with some organic sweet & spicy bbq sauce and brush it on before finishing it off in the air-fryer. The best Jerk Chicken I’ve ever had!
Budget friendly and with a little tarragon, apple slices, pecan slices and cider vinegar even kids like it
I cut the celery very thinly on the bias into “half moons” for added kid appeal.
This as well because it’s quick uses an all the bits and bobs. Sub celery and fennel seed if fennel is not in season.
I usually make pizza once a week, using a recipe I modified from one I found online. It’s not the best pizza ever, but it’s better than what I could find in Virginia, which is why I started making it at home. Now that we live in Pennsylvania, I can’t match the competition, but our homemade pizza is still pretty good.
Pizza
Heat 1 and a third cups of water until they are warm to the touch. Add a pinch of sugar (to help the yeast activate) and a packet of yeast. Stir it and let it stand for ten minutes. Then add 3 tablespoons of olive oil.
Put 4 cups of all-purpose flour into a mixing bowl, then add the water with the yeast and oil. Stir it together and then knead it till it’s mixed thoroughly. Cover it and leave it in a warm spot for two hours to rise. Then put half of it into a sealed container for the next pizza.
Heat the oven to 450. Sprinkle corn meal onto the baking pan to keep the crust from sticking to the pan (some people use parchment paper instead of corn meal). Sprinkle some flour on the kitchen counter (again to keep the dough from sticking). Shape the dough into a ball and roll it out in the flour on the counter (if you don’t have a rolling pin, a wine bottle works). Place the flattened dough on the pan. My dough never fits the pan exactly, so I have to take pieces of dough that are hanging over the edge and put them in spots where the dough doesn’t reach the edge of the pan.
Spread pizza sauce on the dough, then shredded mozzarella cheese, and add whatever toppings you like. 17 minutes is a good baking time in our oven.
It took me months of practice before I was satisfied with the crust I was making.
I found the best pizza sauce recipe.
Signature Cruise Tomato Sauce
Use San Marzano tomatoes for that classic sweet and rich cruise-style sauce flavor.
Ingredients:
- 1 can San Marzano tomatoes
- 4 cloves garlic
- 2 tbsp olive oil
- 1 tsp sugar
- 1 tsp balsamic vinegar
- ¾ tsp salt
- Black pepper to taste
Instructions:
Blend all ingredients in a food processor until smooth. No cooking needed. Spoon directly onto your pizza base.
What is “cruise-style”? And do you use all the ingredients? I would want to leave out the sugar.
Isn’t that ‘Ryan Chapelle’ from 24?
