I also would have liked to hang out with St. Maximilian Kolbe and the gang while he was in Japan.
Probably Peter’s speech to the crowd after the Descent of the Holy Ghost during Pentecost. Honorable mention to St. Boniface cutting down Thor’s sacred oak tree.
Sitting in on the early Church Councils might be kind of interesting (assuming I could understand the language(s) they were speaking : )
I would choose Pentecost. Even though the Church’s sacramental life begins at the Last Supper, Pentecost is the moment the Church becomes visible, empowered, and missionary — the birth of her public life. When the Holy Spirit descended, the apostles were transformed from fearful disciples into bold witnesses, and the Church stepped into the world with divine authority. Everything in Catholic history flows from that single outpouring of grace.

There are many Pentecosts throughout the life of The Christ.
The Pentecost for the Gentiles was in Corinth, with Saint Paul and Saint Peter, where Saint Paul introduces to the Gentiles Jesus as the Temple of the Unknown God to all mankind.
